600 g | 21 oz | 4 cups minced beef, at least 20% fat

1 tsp red chilli flakes

sea salt

freshly ground black pepper


1 Preheat a grill to hot.

2 Combine the minced beef with the red chilli flakes and plenty of salt and pepper in a large mixing bowl.

3 Scrunch together until thoroughly combined. Divide the mixture into eight balls and shape into patties between your hands.

4 Press your thumb into the centres to leave an imprint. Arrange on a grilling tray and grill for 6-8 minutes, turning occasionally, until firm to the touch with a slight spring.

5 Remove and serve as desired.
