1 lemon, juiced

1 Cut the ends away from the courgettes. Feed onto a spiraliser and turn the handle to turn out courgette spaghetti.

2 Gather in a bowl and toss with the lemon juice to prevent browning.

3 To cook, steam over simmering water or saute in hot olive oil for 3-4 minutes.
