Ingredients:


2 large avocados


4 small eggs


baby spinach leaves, to garnish


sea salt


freshly ground black pepper




Method:


1 Preheat the oven to 200°C (180° fan) | 400F | gas 6.



2 Cut the avocados in half, removing their pits. Scoop out about 1 tbsp of flesh from their centres to make space for the eggs.



3 Arrange cut-side up in a baking dish. Carefully crack the eggs into their centres and season with salt and pepper.



4 Bake for about 15 minutes until the eggs are set and the avocado flesh is soft.



5 Remove from the oven and serve with a garnish of spinach leaves.
