Ingredients:


600 g | 21 oz | 4 cups minced chicken


2 tsp Dijon mustard


1 tbsp lemon juice


1/2 tsp dried thyme


60 g | 2 oz | 1/4 cup butter, melted


sea salt


freshly ground black pepper




Method:


1 Preheat the grill to hot.



2 Scrunch together the minced chicken, mustard, lemon juice, thyme, and plenty of seasoning in a mixing bowl.



3 Divide into eight even balls and shape into small patties between your hands. Brush with melted butter on both sides before arranging on a grilling tray. Leave a thumb imprint in each patty.



4 Grill for 4-5 minutes on both sides, until golden-brown and cooked through.



5 Remove from the grill and leave to cool briefly before serving.
