1/2 large cucumber, halved and seeded

1 clove garlic, minced

1 lemon, juiced

2 tbsp mint, leaves only, finely chopped

400 g | 14 oz | 1 1/2 cups unsweetened plain yoghurt

small mint sprig, to garnish

sea salt


1 Coarsely grate the cucumber on a box grater.

2 Combine with the garlic, lemon juice, and mint in a mixing bowl. Stir well until evenly mixed.

3 Add the yoghurt, mix well, and season to taste with salt.

4 Serve with a garnish of mint on top.
